Candy Cookbook
Jalapeno Poppers:

Ingredients:

1 pound fresh jalapeno chilies
1 package (8oz) cream cheese, softened
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
6 slices bacon, crisp ooked and crumbled
1/4 teaspoon salt
1/4 teaspoon chili powder
1/2 cup cracker or bread crumbs

Directions:

Wearing gloves, slice the jalapenos lengthwise into halves. Discard seeds and veins. Rinse. Combine cream cheese, mozzarella cheese, cheddar cheese, bacon, salt and chili powder in bowl and mix well. Stuff each jalapeno with about 1 teaspoon of the cream cheese mixture, rounding the top. Coat with cracker/bread crumbs and arrange on a lined baking sheet. Bake at 300 degree F for 20 minutes for HOT poppers, 30 minutes for medium HOT poppers and 40 minutes for MILD poppers.
I have a "ton" of Sugar Cookie box mixes....anyone have any fun and simple recipes that I might try...using the dry mix? I was thinking of experimenting with lemon extract and making some sort of a lemon-sugar cookie bar? Any ideas? Tips? ♥
